 Think $20 for a cocktail in a restaurant is pushing it? Try sipping King Louie, at $1,000 a “pop.”

That’s what Shoushin, a new Tokyo-style sushi restaurant in north Toronto, is charging for 15 millilitres of Louis XIII Rare Cask 42,6 — a unique experience, to be sure, since it’s the only bottle in a licensed establishment in Canada. And, take heart, too, since everybody who orders a glass gets a plate of sushi to go with, so you really have to factor that into the price.

Sushi and cognac may not appear to be a natural pairing, but Shoushin’s highly original chef, Jackie Lin, sees it differently. As such, Lin has prepared a special sushi dinner inspired by the rare cognac, something he envisioned the moment he first drank in the aroma of Louis XIII Rare Cask as he prepared a catered meal at a client’s private home.

“Because, even though it’s 42.6 per cent in alcohol, it’s so mellow,” says Lin, “So I made a special dish from the fatty tuna belly, uni and caviar, and it’s a mutual thing, drinking this and having the sushi together.”
